Ingredients
- 2 Simply Steaks Ribeye Steaks, at room temperature
- 1 tbsp neutral oil
- 2 tbsp butter
- 2 cloves garlic, crushed
- A few sprigs of thyme
- Sea salt and cracked black pepper
Method
- Pat the steaks completely dry and season generously with salt on both sides. Leave them out for 20 minutes.
- Heat a heavy pan until it just starts to smoke. Add the oil, then lay the steaks in away from you.
- Sear for 2 to 3 minutes a side without moving them, until a deep brown crust forms.
- Add the butter, garlic and thyme. Tilt the pan and spoon the foaming butter over the steaks for 60 to 90 seconds.
- Rest for 5 minutes on a warm plate, then slice against the grain.
Tip: a dry surface is what makes the crust. If the steak looks damp, dry it again.
